How to care for your macarons
Macarons are a very delicate pastry. In order to maintain the crunchy/chewy texture of the shell, they must be refrigerated in a sealed container. Macarons made with buttercream based fillings will last up to a week in the refrigerator. Ganache based fillings last up to two weeks. Macarons can be frozen for 3 months. In either case, the macarons will need about an hour to thaw to room temperature for the peak texture experience.
